  • 1 cup pumpkin puree Canned or freshly cooked
  • 1 cup brown sugar Packed
  • 1/2 cup maple syrup
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 eggs

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, mix together the pumpkin puree, brown sugar, maple syrup, and melted butter until combined.
  • Add the vanilla extract and eggs to the mixture and stir until smooth.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Gradually fold the dry ingredients into the wet ingredients until just combined.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the blondies to cool in the pan before cutting into squares.

Notes

To enhance your blondies, try serving with vanilla ice cream, fresh fruit, warm caramel sauce, or whipped cream. Store in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months. Reheat in the oven or air fryer if needed.
