  • 1 unbaked pie crust unbaked pie crust Can use store-bought or homemade.
  • 1 tablespoon butter Dot on filling before baking.

Preparation

  • Preheat the oven to 375°F (190°C) to ensure even baking.
  • In a large bowl, combine chopped rhubarb, sugar, cornstarch, salt, lemon zest, and lemon juice. Stir until glossy and smooth.
  • Pour the mixture into the unbaked pie crust and dot with butter.

Baking

  • Bake for 30-35 minutes or until the rhubarb is tender and the filling is bubbly.
  • Allow to cool before serving to let the filling set.

Notes
