  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced green chilies Adjust quantity for desired spiciness.
  • 2 cups chicken broth
  • 1 cup heavy cream or sour cream Sour cream can be substituted.
  • 1 tsp cumin A dash more can enhance the flavor.
  • 1 tsp chili powder
  • to taste Salt and pepper
  • to garnish Chopped cilantro Adds freshness.

Preparation

  • In a large pot over medium heat, sauté the onion and garlic until translucent.
  • Add the shredded chicken, beans, corn, and diced green chilies, stirring to combine.
  • Pour in the chicken broth and bring the mixture to a simmer.
  • Stir in the heavy cream, cumin, chili powder, salt, and pepper.
  • Allow the chili to simmer for about 15 minutes, stirring occasionally.
  • Once heated through, serve in bowls and garnish with chopped cilantro.

Notes

For leftovers, store in an airtight container. To reheat, add a splash of broth or cream for moisture.
