  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans (cannellini or navy beans)
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 1 cup corn (fresh or frozen)
  • 1 tablespoon olive oil
  • optional Fresh cilantro for garnish

Preparation

  • In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic. Cook until the onion softens and becomes translucent, about 3-4 minutes.
  • Add the boneless, skinless chicken breasts to the pot. Cook until both sides are nicely browned, about 5-7 minutes. The chicken will finish cooking later during simmering.
  • Stir in the cumin, chili powder, salt, and pepper. Then add the can of diced tomatoes, chicken broth, white beans, and corn. Stir everything together, bring to a boil, then reduce heat and let it simmer for 20-30 minutes.
  • After simmering, shred the chicken in the pot using two forks, stirring to combine everything well. Your White Chicken Chili is now ready to serve! Garnish with fresh cilantro, if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to four days. It can also be frozen for up to three months. Reheat on the stove or in the microwave for best results.
