  • 1 lb Beef stew meat Chuck or round works fine
  • 2 medium Potatoes Russet or Yukon gold
  • 2 large Carrots
  • 2 stalks Celery
  • 1 medium Onion
  • 1 can (14.5 oz) Canned diced tomatoes
  • 1 cup Frozen corn
  • 1 cup Frozen green beans
  • 4 cups Beef broth

Seasoning

  • to taste Salt
  • to taste Pepper
  • to taste Italian seasoning
  • optional Garlic Can be added for extra flavor

Instructions
 

Preparation

  • Brown the stew meat in a big pot to enhance the flavor.
  • Add chopped onions and let them sweat.
  • Stir in minced garlic, sliced carrots, and chopped celery.
  • Add diced potatoes, canned tomatoes, beef broth, and seasonings.
  • Bring to a boil, then reduce the heat and let it simmer.
  • About 10 minutes before serving, add frozen corn and green beans.
  • Taste and adjust seasoning with salt if needed.

Notes

Leftovers improve in flavor overnight. Reheat with a splash of broth or water if needed. Prep a day ahead to save time.
