Ingredients

  • 1 cup tahini
  • 1/2 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup coconut flour or almond flour Coconut flour yields a different texture and flavor.
  • 1/2 teaspoon baking soda For leavening.
  • 1/4 teaspoon salt

Add-ins

  • 1/2 cup vegan chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine tahini, maple syrup, and vanilla extract. Stir until smooth and creamy.
  • Add coconut flour, baking soda, and salt to the tahini mixture and stir gently until combined.
  • Fold in the vegan chocolate chips until evenly distributed.

Baking

  • Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them apart.
  • Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.

Cooling

  • Let cookies rest on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container in the refrigerator for up to a week, or freeze for up to three months. To reheat, place in the oven or air fryer for a few minutes.
