  • 1/2 cup brown sugar Gives a deep flavor.
  • 1/4 cup maple syrup Natural sweetener.
  • 1 teaspoon vanilla extract For enhanced flavor.

Mix-ins

  • 1 cup vegan chocolate chips Rich chocolate flavor without dairy.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together almond flour, all-purpose flour, baking soda, and salt.
  • In another bowl, whisk together melted coconut oil, brown sugar, maple syrup, and vanilla extract until smooth.
  • Gradually combine the dry ingredients with the wet mixture. Stir until fully mixed; the dough will be thick.
  • Fold in the vegan chocolate chips.
  • Scoop out tablespoon-sized balls of dough and place them on a baking sheet lined with parchment paper, making sure to leave space between each cookie.

Baking

  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. Reheat in the oven or air fryer for best results.
