  • 1 cup coconut oil, melted Make sure it's fully melted.
  • 1 cup brown sugar
  • 1/4 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegan chocolate chips

Baking

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the melted coconut oil and brown sugar together until well combined.
  • Add the almond milk and vanilla extract, stirring until smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
  • Fold in the vegan chocolate chips.
  • Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months. Reheat in the oven or air fryer at 350°F (175°C) for 5-7 minutes.
