Main Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup peanut butter or almond butter Choose according to preference or allergy concerns.
  • 1/2 cup maple syrup or agave nectar Sweetener can be adjusted to taste.
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Blend the drained and rinsed chickpeas in a food processor until smooth.
  • Add the peanut butter, maple syrup, vanilla extract, baking soda, and salt to the chickpeas and process until well combined.

Assembly

  • Stir in the vegan chocolate chips into the dough.
  • Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each scoop.

Baking

  • Bake in the preheated oven for about 10-12 minutes or until the edges start to turn golden.
  • Remove from oven and allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat at 350°F for about 5 minutes.
