Ingredients
  

Dry Ingredients

  • 1 cup gluten free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Make sure it's softened, not melted.
  • 1/2 cup brown sugar Light or dark brown sugar can be used.
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg Room temperature recommended.

Chocolate Chips

  • 1 cup chocolate chips Use semi-sweet or dark chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the gluten free flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Mix in the vanilla extract and egg until well combined.
  • Gradually blend in the dry ingredients until just combined. Avoid overmixing.
  • Gently fold in the chocolate chips.
  • Drop rounded tablespoons of dough onto a baking sheet with some space between them.
  • Bake for 10-12 minutes or until they are golden brown. Check closely to avoid overbaking.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to five days or freeze for up to three months. Reheat in the oven at 350°F for about 5 minutes.
