  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Added Flavor

  • 1 cup gluten-free chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
  • In another bowl, cream the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the vanilla extract and the large egg until well combined.
  • Gradually add the dry ingredients to the wet mixture and stir until fully combined.
  • Fold in the gluten-free chocolate chips.

Baking

  • Drop tablespoon-sized balls of dough onto a lined baking sheet, leaving space between each ball.
  • Bake for 10-12 minutes or until the cookies are golden brown.
  • Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week in the fridge or freeze for up to three months. To restore crispness, reheat at 350°F for 5 minutes.
