Instructions
 

Preparation of Soup

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until the onion turns translucent, about 3 to 5 minutes.
  • Stir in crushed tomatoes and vegetable broth. Add sugar, salt, pepper, dried basil, and dried oregano.
  • Bring to a gentle simmer and cook for 15-20 minutes to blend the flavors.

Preparation of Dumplings

  • In a separate bowl, mix flour, baking powder, and salt.
  • Stir in shredded cheddar cheese and chopped fresh parsley.
  • Gradually add milk and melted butter, mixing until just combined.

Cooking Together

  • Drop spoonfuls of dumpling mixture into the simmering soup.
  • Cover the pot and cook for another 10-12 minutes until dumplings are fluffy.

Serving

  • Ladle the soup into bowls and serve warm, garnished with parsley or a drizzle of olive oil.
