  • 2 cans canned tomato soup Choose your favorite brand
  • 4 cups vegetable broth Low-sodium optional
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste Adjust according to preference

For the dumplings

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese Feel free to substitute with other cheeses
  • 1/4 cup chopped fresh parsley For garnish and flavor
  • 1/2 cup milk Any type of milk works
  • 2 tablespoons unsalted butter, melted

Instructions
 

Preparation

  • In a large pot, heat things up! Sauté the chopped onion and minced garlic until they turn translucent.
  • Add the canned tomato soup and vegetable broth, along with the dried basil, dried oregano, salt, and pepper. Bring to a gentle simmer.

Dumpling Preparation

  • In a separate bowl, mix together the flour, baking powder, and the remaining salt.
  • Stir in the shredded cheddar cheese and chopped parsley.
  • Add in the milk and melted butter, mixing until just combined.

Cooking

  • Drop spoonfuls of the dumpling mixture into the simmering soup.
  • Cover the pot and let the dumplings steam for 10-15 minutes.

Serving

  • Serve the soup hot and enjoy.

Notes
