Dressing Ingredients

  • 1/2 cup mayonnaise You can use store-bought for convenience
  • 1/4 cup sour cream Greek yogurt can be substituted for a lighter version
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • Salt and pepper to taste

Preparation

  • Begin by boiling the diced potatoes in salted water until they are tender, which typically takes about 10-15 minutes. Drain them and let them cool.
  • In a large bowl, combine the cooled potatoes, chopped eggs, crumbled bacon, and sliced green onions.
  • In a separate bowl, mix together the mayonnaise, sour cream, Dijon mustard, white wine vinegar, salt, and pepper until smooth.
  • Pour the dressing over the potato mixture and gently stir until everything is well coated.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes
