Main Ingredients

  • 2 pounds potatoes Yukon Golds or red potatoes are preferred.
  • 1 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup celery, diced Fresh and organic recommended for a crisp bite.
  • 1/2 cup red onion, diced
  • 1 cup bacon, cooked and crumbled Can use pre-cooked bacon or turkey bacon for a leaner option.
  • to taste Salt and pepper
  • 2 hard-boiled eggs, chopped (optional)

Instructions
 

Preparation

  • Boil the potatoes in salted water until fork-tender. Drain and let them cool, then dice.
  • In a large bowl, mix together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to make the dressing.
  • Add the cooled potatoes, celery, red onion, bacon, and optional hard-boiled eggs to the bowl.
  • Gently mix until everything is well coated with the dressing.
  • Refrigerate for at least 1 hour before serving for the best flavor.

Notes

Garnish with fresh herbs or a sprinkle of paprika for a bright pop of color. Store leftovers in an airtight container in the refrigerator for 3 to 5 days. If desired, a little more vinegar may brighten the flavors.
