Ingredients
  

Main Ingredients

  • 2.5 lbs Yukon gold or red potatoes These potatoes are preferred for their flavor and texture.
  • 1 tablespoon apple cider vinegar Adds tanginess to the salad.
  • 1/2 cup mayonnaise Provides creaminess.
  • 1/2 cup sour cream Enhances the creamy texture.
  • 1 tablespoon yellow mustard
  • 1/2 medium red onion, diced Provides crunch and flavor.
  • 2 stalks celery, diced Adds freshness.
  • 1/4 cup dill pickle relish (optional) For added sweetness and flavor.
  • 2 tablespoons fresh dill, chopped (optional) Adds a lovely herb flavor.
  • 1 teaspoon celery seed For extra flavor.
  • 4 hard-boiled eggs, peeled and chopped Adds protein and richness.
  • to taste Salt and pepper Adjust according to taste.

Instructions
 

Preparation

  • Scrub the potatoes clean and bring them in a pot of salted water to boil over medium-high heat.
  • Once boiling, reduce heat to medium-low and cook the potatoes for 25-30 minutes or until potatoes are easily pierced with a fork.
  • Set up an ice bath and add the cooked potatoes to cool down.
  • Once cool, peel by gently pinching the skin away and chop potatoes into bite-sized chunks.

Mixing

  • Add potatoes to a mixing bowl and drizzle with apple cider vinegar.
  • Add mayonnaise, sour cream, mustard, red onions, celery, relish, dill, celery seed, eggs, and salt and pepper to taste in the mixing bowl.
  • Stir gently to combine.

Chilling

  • Chill for at least 30 minutes before serving.
  • Enjoy your creamy potato salad!

Notes

For a lighter version, swap out some mayonnaise for Greek yogurt. If you love a bit of crunch, add diced bell peppers or carrots for color and texture. Always taste and adjust seasoning just before serving for optimum flavor. Cleanup can be easier if you work with a bowl that can be easily rinsed.
