  • 1 can (about 13.5 oz) full fat coconut milk Use full fat for richness.
  • 1 cup chicken broth or water Optional, for thinning.
  • 1 to 2 tablespoons fish sauce Soy sauce can be swapped.
  • 1 to 2 teaspoons brown sugar Balances heat and flavor.
  • 1 small onion, sliced (optional) Adds flavor.
  • 1 to 2 cups broccoli florets or green beans Use for texture.
  • 1 bell pepper, sliced bell pepper Add near the end to keep crisp.
  • 1 teaspoon grated ginger or minced garlic Optional, adds flavor.
  • lime wedges Lime wedges and basil or cilantro for topping For serving.
  • cooked jasmine rice Cooked jasmine rice for serving Base for the curry.

Preparation

  • Start your rice first, using a rice cooker or stovetop.
  • Heat oil in a large skillet or pot over medium heat, then add curry paste and stir for about 30 to 60 seconds until fragrant.
  • Add ginger and garlic, then pour in coconut milk, stirring until smooth.
  • Add chicken pieces and bring to a gentle simmer, cooking for about 6 to 10 minutes until the chicken is cooked through.
  • Add veggies that take longer first (broccoli or green beans), then add bell pepper near the end, simmering for an additional 3 to 6 minutes.
  • Stir in fish sauce and brown sugar. Adjust seasoning with more curry paste or lime juice as needed.
  • For meal prep, portion rice and curry into containers.

Notes

Curry can be bulked up with other proteins like shrimp, tofu, or chickpeas. If reheating, use a splash of water to prevent drying out chicken. This recipe works well for meal prep and lasts about 4 days in the fridge.
