  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin

  • 2 cups beef broth
  • 1 can (15 ounces) kidney beans, drained and rinsed

Preparation

  • In a large pot, brown the beef stew meat over medium heat.
  • Add the chopped onion and minced garlic, cooking until the onion is translucent.
  • Stir in the diced tomatoes, chili powder, cumin, salt, and pepper.
  • Pour in the beef broth and bring to a simmer.
  • Cover and let it stew for 2 hours, or until the meat is tender.
  • Add kidney beans and cook for an additional 30 minutes.
  • Serve hot.
