  • 4 cups frozen tater tots
  • 1 pound beef sausage
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 large eggs fried or scrambled
  • 1/2 cup shredded cheddar cheese
  • 2 green onions sliced
  • 1/4 teaspoon red pepper flakes optional, for heat

Preparation

  • Preheat your oven according to the package instructions for the tater tots. Spread them out in a single layer on a baking sheet and bake until crispy and golden brown.
  • In a large skillet over medium heat, cook the beef sausage, breaking it up as it cooks until completely brown, about 5-7 minutes.
  • Reduce the heat to low and toss in the butter to melt. Sprinkle the flour over the sausage, stirring well to coat.
  • Slowly pour in the milk while stirring constantly to avoid lumps, continuing to stir until the gravy thickens, about 3-5 minutes. Season with salt, pepper, and garlic powder to taste.
  • In a separate pan, cook the eggs to your liking—either fried with a runny yolk or scrambled.

Assembly

  • Divide the crispy tater tots into serving dishes. Spoon the hot sausage gravy over the tater tots.
  • Add a cooked egg on top of each bowl, and sprinkle with shredded cheddar cheese and sliced green onions.
  • For a bit of heat, add a pinch of red pepper flakes.
