  • 4.5 oz bacon (cut into 1/2-inch pieces) Use quality bacon for the best flavor.
  • 1.5 tbsp extra virgin olive oil A good quality olive oil enhances the salad.
  • 1 bunch fresh herbs (onion and basil) Fresh herbs add vibrant flavor.
  • 1/2 tsp red chili flakes Adjust according to heat preference.
  • 1 large lemon (zested and juiced) Provides freshness to the dish.
  • 4.5 oz sour cream For creamy texture and tang.
  • 1 tsp Dijon mustard Adds depth of flavor.
  • 1/2 tsp sea salt Enhances all flavors.
  • 1/2 tsp freshly cracked black pepper Freshly cracked is preferred for flavor.

Preparation

  • Bring a large pot of water to a boil, adding a generous pinch of salt.
  • Add the potatoes and cook until tender but still holding their shape (about 15-20 minutes).
  • In a skillet over medium heat, sauté the diced bacon until crispy.
  • Once the potatoes are done, drain them and let them cool slightly. Peel and chop into bite-sized pieces.
  • In a large mixing bowl, combine the warm potatoes with the sautéed bacon (reserve skillet drippings).
  • Add the extra virgin olive oil, red chili flakes, lemon zest and juice, sour cream, Dijon mustard, sea salt, and black pepper.
  • Gently fold everything together, ensuring even coating of the creamy mixture.
  • Adjust seasoning as necessary and sprinkle fresh herbs on top before serving.

Notes

For a chunkier salad, avoid mashing the potatoes while mixing. Leftovers can be stored in an airtight container for up to three days and flavors will deepen overnight.
