Ingredients
  

For the dressing

  • 1 cup Greek yogurt Preferably Fage total 5% for texture
  • 3 tbsp mayo
  • 1.5 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1.5 pieces limes Zested and juiced

For the salad

  • 6.7 oz rotini Barilla for best texture
  • 2.5 cups corn Can use frozen or fresh
  • 2 tsp avocado oil
  • 2.5 cups chicken Shredded into bite-sized pieces
  • 1 cup cotija Crumbled
  • 1/2 cup cilantro Chopped
  • Lime wedges For serving

Instructions
 

Cooking the Pasta

  • Boil a large pot of salted water and cook the rotini according to package directions until al dente.

Preparing the Dressing

  • In a medium bowl, mix Greek yogurt, mayo, chili powder, garlic powder, salt, lime zest, and juice until smooth.

Sautéing the Corn

  • In a skillet, warm avocado oil over medium heat, add corn, and cook with a sprinkle of chili powder until slightly charred, about 5-7 minutes.

Shredding the Chicken

  • Shred the cooked chicken into bite-sized pieces.

Combining Ingredients

  • Once the pasta is done, drain and rinse with cold water. In a large mixing bowl, combine the pasta, corn, chicken, cotija, and cilantro, then gently fold in the dressing.

Final Touches

  • Taste the salad and adjust with additional lime juice or yogurt if desired, then chill for at least 30 minutes before serving.

Notes

For extra flavor, consider adding diced avocado or smoked paprika. The salad can be stored in an airtight container for up to three days.
