Ingredients
  

For the Salad

  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/2 cup feta cheese, crumbled

For the Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • to taste salt and pepper

Instructions
 

Combine the Ingredients

  • In a large bowl, add the broccoli florets, cherry tomatoes, red onion, sunflower seeds, dried cranberries, and crumbled feta cheese. Mix everything together gently.

Make the Dressing

  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey, and salt and pepper to taste.

Toss and Store

  • Pour the dressing over the salad and toss until well coated. Divide the salad into meal prep containers.

Notes

Store in the fridge for up to 4 days or freeze for about 2 months. Use pre-chopped vegetables and pre-crumbled feta to save time.
