Ingredients
  

For the crust

  • 2 cups All-Purpose Flour (Gluten-free flour can be used.)
  • 1/4 cup Granulated Sugar (Adjust based on taste.)
  • 1 cup Unsalted Butter (Can substitute with margarine.)
  • 1/2 teaspoon Salt (Enhances sweetness.)

For the filling

  • 4 cups Fresh Rhubarb (Substitute with strawberries for a sweeter dessert.)
  • 2 cups Granulated Sugar (Adjust quantity if using particularly tart rhubarb.)
  • 3 large Eggs (Binds the filling together.)
  • 1 teaspoon Vanilla Extract (Optional.)
  • 1/3 cup All-Purpose Flour (Can use gluten-free.)
  • 1/2 teaspoon Baking Powder (Omit if using a different leavening agent.)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.
  • In a large bowl, combine 2 cups of flour, 1/4 cup of sugar, and the salt. Cut in the butter until the mixture resembles coarse crumbs.
  • Press this mixture uniformly into the bottom of the baking dish.
  • Bake the crust for about 15 minutes, or until it begins to set but not brown.

Filling

  • While the crust is baking, chop 4 cups of cleaned rhubarb into small pieces.
  • In a separate bowl, mix the rhubarb with 2 cups of sugar, the remaining flour, baking powder, and eggs. Stir in the vanilla extract if using. Whisk until smooth and the rhubarb is well coated.
  • Once the crust is ready, pour the rhubarb filling over the hot crust, spreading it evenly.
  • Return the baking dish to the oven and bake for an additional 30-35 minutes, until the filling is set but still slightly jiggly in the center.

Finishing Touches

  • Let the bars cool completely before slicing into squares.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate for longer freshness. They freeze well for up to three months.
