Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground cloves
  • 0.25 tsp salt

Wet Ingredients

  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar, plus extra for rolling
  • 0.25 cup brown sugar, packed
  • 0.33 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

Prepare the Dough

  • Preheat your oven to 350°F (175°C). In a large bowl, beat the softened butter with granulated and brown sugars until smooth.
  • Add the molasses, egg, and vanilla extract. Mix until everything is well combined.

Combine Wet and Dry Ingredients

  • In another bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
  • Slowly add the dry ingredients to the wet mixture. Stir until just combined. Do not overmix; this will keep your cookies soft.

Shape and Bake

  • Scoop rounded tablespoons of dough and roll them in the extra granulated sugar.
  • Place them on a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake for 10-12 minutes or until the edges are lightly brown. Let them cool for a few minutes on the pan before transferring to a cooling rack.

Notes

Store in an airtight container at room temperature for up to a week. Can be refrigerated for up to two weeks or frozen for up to three months. Warm in the oven at 350°F (175°C) for about 5 minutes before serving.
