Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup strawberry simple syrup to brush on layers

For the Filling

  • 2 cups fresh strawberries, sliced
  • 2 cups heavy whipping cream for whipping
  • 0.25 cup powdered sugar for sweetening the cream

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a bowl, combine the flour, baking powder, and salt. Whisk together gently.
  • In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour. Mix until just combined.
  • Divide the batter evenly between the prepared pans and smooth the tops.

Baking

  • Bake for 25-30 minutes, checking for doneness with a toothpick.
  • Once done, allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Assembly

  • Once cooled, slice each cake layer in half horizontally to create four thin layers.
  • Whip the heavy cream with powdered sugar until stiff peaks form.
  • On a serving plate, place one layer, brush with strawberry syrup, spread whipped cream on top, and add sliced strawberries.
  • Repeat with remaining layers, then frost the top and sides of the cake with extra whipped cream.
  • Decorate the top with additional fresh strawberries.

Serving

  • Slice and serve the cake. Enjoy the burst of flavors!

Notes

For added indulgence, pair with vanilla ice cream or fresh berries. Store in the fridge covered with plastic wrap.
