  • 1 cup milk Whole milk recommended for richness.
  • 3 eggs Large eggs are preferred.
  • 2 teaspoons baking powder Ensure it's fresh for best results.
  • 1 teaspoon vanilla extract
  • a pinch salt

Filling Ingredients

  • 3 cups fresh strawberries, chopped Chop into small pieces.
  • 1 cup heavy whipping cream Use cold for better whipping.
  • 2 tablespoons powdered sugar For sweetening the cream.
  • Fresh mint leaves for decoration Optional, for a fresh touch.

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • Grease two round cake pans with butter and dust with flour.

Baking the Cake

  • In a large bowl, whisk together flour, baking powder, and salt.
  • Blend in softened butter and sugar using a mixer on low speed until fluffy.
  • Add the eggs, milk, and vanilla extract; mix until smooth.
  • Divide the batter evenly between the two prepared pans.
  • Bake for about 25-30 minutes, or until a toothpick comes out clean.
  • Let the cakes cool in the pans for a few minutes, then transfer to a wire rack to cool completely.

Preparing the Filling

  • In a bowl, combine heavy whipping cream and powdered sugar, whipping until soft peaks form.
  • Chop fresh strawberries and sprinkle with a little sugar, letting them sit for about 10 minutes.

Assembly

  • Once the cakes are cool, place one layer on a cake stand and spread a layer of whipped cream on top.
  • Add a generous amount of chopped strawberries.
  • Top with the second cake layer, repeat the process with whipped cream and strawberries.
  • Garnish with fresh mint leaves if desired.

Notes

Store any leftovers in an airtight container in the fridge for 2-3 days. The flavors will meld beautifully over time.
