Ingredients
  

Crust and Topping

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 1 pinch salt
  • 0.75 cups chilled butter, cubed 1 1/2 sticks

Filling

  • 2 large eggs
  • 1 cups granulated sugar
  • 0.5 cups sour cream
  • 0.33 cups all-purpose flour
  • 1 pinch salt
  • 3 cups fresh diced strawberries

Instructions
 

Preparation of Crust and Topping

  • Preheat the oven to 350 degrees F.
  • Grease a 7x11-inch glass baking dish lightly.
  • In a large bowl, combine flour, sugar, and salt. Add the cubed butter and mix until crumbly.
  • Set aside 3/4 cup of the crust mixture for topping.
  • Press the remaining crust mixture evenly into the bottom of the greased baking dish.
  • Bake for about 15 minutes and then let cool slightly.

Preparation of Filling

  • In a large bowl, whisk the eggs thoroughly. Add the sugar, sour cream, flour, and salt, and mix until smooth.
  • Gently stir in the diced strawberries.
  • Pour the filling mixture evenly over the baked crust.
  • Sprinkle the reserved crust mixture over the top of the filling.

Baking

  • Bake again for 45-55 minutes, until the top is lightly browned and filling is set.
  • Let the bars cool for about one hour before cutting.

Notes

For serving, pair with ice cream, fresh fruit, sauces, or whipped cream. Store in an airtight container for up to a week in the fridge or freeze for longer storage.
