  • 2 cups canned coconut milk or half and half Choose based on desired creaminess.
  • 1 cup fresh or frozen strawberries Blend and adjust sweetness as needed.
  • 2 tablespoons honey or maple syrup Optional sweetener to taste.
  • 1 packet plain unflavored gelatin For best texture, bloom in cool water first.
  • 1 teaspoon vanilla extract Optional for added flavor.
  • a pinch salt Enhances flavor.

Preparation

  • Bloom the gelatin by sprinkling it over a small amount of cool water and let it sit for about 5 minutes.
  • Gently heat the coconut milk (or dairy) until warm, but do not let it boil.
  • Whisk in the bloomed gelatin until fully melted and the mixture is smooth.
  • Blend strawberries with a tiny bit of sweetener, then stir into the warm mixture. Strain if you want a smoother texture.
  • Pour the mixture into small cups and chill for 3 to 4 hours, preferably overnight for best results.

Notes

Store covered in the fridge for up to 4 days. Avoid freezing to prevent grainy texture. To serve, top with sliced strawberries and a dollop of yogurt, and consider a sprig of mint for a fancy touch.
