Ingredients
  

Base Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt

Filling Ingredients

  • 2 cups fresh strawberries, chopped
  • 1 tablespoon cornstarch Helps thicken the juices from strawberries.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, letting the edges hang over.
  • In a medium bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined, with a crumbly texture.
  • Press half of the oat mixture firmly into the bottom of the baking dish.
  • Wash and chop the fresh strawberries, then mix with cornstarch in a separate bowl until well coated.
  • Spread the strawberry mixture evenly over the pressed oat layer.
  • Crumble the remaining oat mixture over the strawberries to create a topping.

Baking

  • Place the baking dish in the preheated oven and bake for 25-30 minutes until the top is golden brown.
  • Remove from the oven and let cool completely before slicing into squares or rectangles.

Notes

Serve warm, optionally with vanilla ice cream, whipped cream, or drizzled chocolate sauce. Store in an airtight container in the fridge for up to one week or in the freezer for up to three months.
