Ingredients
  

Crust and Topping

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch

Strawberry Filling

  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (3–5 minutes).
  • Mix in the all-purpose flour, salt, and vanilla extract until the dough comes together, soft and moist.
  • Reserve 1 cup of dough for crumbling on top. Press the remaining dough evenly into the bottom of the prepared baking dish.
  • In another bowl, mix the sliced strawberries with cornstarch and lemon juice. Toss until the strawberries are well-coated.
  • Spread the strawberry filling evenly over the crust.
  • Crumble the reserved dough over the strawberries evenly.
  • Bake for 35-40 minutes or until the topping is golden brown.
  • Allow the bars to cool in the dish before cutting.

Notes

For best results, serve with a scoop of vanilla ice cream or a drizzle of berry sauce. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
