Ingredients
  

Strawberry Jam

  • 500 g strawberries (fresh or frozen) Main ingredient for the jam.
  • 50 g granulated sugar To sweeten the jam.
  • 1 tablespoon water To help get the jam started.

Cake Ingredients

  • 190 g all-purpose flour Foundation of the cake.
  • 75 g natural cocoa powder For rich chocolate flavor.
  • 1 teaspoon baking powder To make the cake light and fluffy.
  • 0.5 teaspoon baking soda Another boost for the cake.
  • 0.5 teaspoon salt Enhances all flavors.
  • 115 g unsalted butter (melted) Adds richness.
  • 100 g light-tasting oil Helps keep the cake moist.
  • 100 g granulated sugar A sweet touch.
  • 100 g brown sugar For warm caramel flavor.
  • 2 large eggs (room temperature) Brings everything together.
  • 330 g milk (room temperature) For tender texture.
  • 200 g strawberries (finely diced) Adds flavor to the cake.
  • 7 strawberries halved for decoration For topping the cake.

Frosting Ingredients

  • 250 g cream cheese (softened to room temperature) Luscious base for frosting.
  • 115 g unsalted butter (softened to room temperature) Blends perfectly with cream cheese.
  • 100 g powdered sugar For a sweet frosting.
  • 70 g strawberry jam (from above) Adds fruity flavor to frosting.
  • 1 teaspoon vanilla extract For warmth and sweetness.

Instructions
 

Make the Strawberry Jam

  • In a small saucepan, toss the strawberries, granulated sugar, and water together.
  • Place over medium heat, stirring gently until the strawberries break down and the mixture becomes syrupy, about 10-15 minutes.
  • Take off heat and let cool.

Prepare the Cake Batter

  • Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or oil.
  • In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, combine melted butter, light-tasting oil, granulated sugar, and brown sugar, and mix until creamy.
  • Add the eggs and mix well. Gradually add milk and mix until smooth.
  • Slowly stir the dry mixture into wet ingredients until just combined.

Bake the Cakes

  • Pour the batter evenly into the prepared pans.
  • Bake for about 25-30 minutes, checking for doneness with a toothpick.
  • Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.

Make the Cream Cheese Frosting

  • In a large mixing bowl, beat softened cream cheese and butter until creamy.
  • Gradually add powdered sugar and mix until smooth.
  • Add in strawberry jam and vanilla extract, mixing until combined.
  • Fold in finely diced strawberries.

Assemble the Cake

  • Place one cake layer on a serving plate and spread cream cheese frosting on top.
  • Spoon on some strawberry jam, then add the second cake layer and frost the top and sides.
  • Decorate with halved strawberries.

Serve and Enjoy!

  • Slice the cake and enjoy with family, optionally serving with whipped cream or ice cream.

Notes
