Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda Ensure it is fresh for best results.
  • 1/4 teaspoon salt
  • 1 large egg At room temperature.
  • 1 teaspoon vanilla extract For the dough.
  • 1 cup fresh strawberries, chopped Can substitute with thawed frozen strawberries.

For the cheesecake filling

  • 1 cup cream cheese, softened Use block cream cheese for best texture.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract For the filling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and granulated sugar until fluffy.
  • Beat in the egg and one teaspoon of vanilla until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the chopped fresh strawberries.
  • In another bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.

Assembly and Baking

  • Scoop about a tablespoon of cookie dough, flatten it slightly, and place a small amount of cheesecake filling in the center.
  • Wrap the dough around the filling completely.
  • Place filled cookie dough balls on a baking sheet lined with parchment paper, leaving space between each.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to five days or refrigerate for a week. Freeze them for up to three months. Reheat in the oven at 350°F for 5 minutes if desired.
