Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 2 cups fresh strawberries, diced

For the frosting

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Whole strawberries Additional whole strawberries for decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine all-purpose flour, baking powder, and salt. Whisk together.
  • In a separate bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Beat in the eggs one at a time, then mix in vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, pouring in milk and mixing until smooth.
  • Fold in the diced fresh strawberries gently.

Baking

  • Pour the batter evenly into the prepared cake pans.
  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting and Assembly

  • In a clean bowl, beat heavy cream with powdered sugar until stiff peaks form.
  • Once the cakes are completely cool, place one layer on a serving plate and spread a layer of whipped cream on top.
  • Add a layer of strawberries, then place the second layer on top and frost the entire cake with the remaining whipped cream.
  • Garnish the top of the cake with whole strawberries.

Serving

  • Slice the cake and serve it to your guests.

Notes

For a cozy pairing, serve with vanilla ice cream or fresh fruit salad. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
