Ingredients

For the Steak

  • 1-2 pounds steak of your choice (filet, ribeye, sirloin, or strip) Opt for cuts with good marbling for richness.
  • 2 tablespoons cooking oil (olive oil or canola oil) Used for searing.
  • Salt and pepper to taste Generously season for enhanced flavor.

For the Creamy Whiskey Mushroom Sauce

  • 2 tablespoons butter Adds richness to the sauce.
  • 1/2 cup onion, minced For sweetness.
  • 1 clove garlic, finely minced Adds warmth and aroma.
  • 2-3 cups sliced fresh mushrooms (crimini or button) Fresh mushrooms work beautifully.
  • 1/8 teaspoon ground nutmeg For a hint of earthy spice.
  • 3 tablespoons whiskey (or bourbon, beer, or white wine) For deglazing and flavor.
  • 1 tablespoon balsamic vinegar For depth of flavor.
  • 1/2 cup heavy cream Feel free to reduce the amount for lightness.
  • 1 tablespoon finely minced fresh herb of your choice Chives, parsley, tarragon, or basil work well.

Instructions

Preparation

  • Rub both sides of each steak with cooking oil for an even coating.
  • Sprinkle salt and pepper liberally on both sides of the steaks.

Cooking the Steak

  • Preheat a large frying pan or grill pan over high heat.
  • Add the steaks to the hot pan and cook until they reach desired doneness.
  • For medium-rare, aim for 145F, cooking about 5 minutes per side for a 1-inch thick steak.
  • Remove steaks from the pan, cover them loosely with tin foil, and let them rest.

Making the Sauce

  • In the same pan, lower the heat and add butter, letting it melt.
  • Sauté the minced onion until softened and slightly golden, about 3 minutes.
  • Add the minced garlic and sauté for another minute.
  • Increase heat and add the sliced mushrooms; sauté until browned, 3-5 minutes.
  • Season with salt, pepper, and nutmeg before deglazing with whiskey and balsamic vinegar.
  • Let it bubble for 1-2 minutes, then stir in the heavy cream and simmer for 30 seconds.
  • Finish by adding freshly minced herbs to the sauce.

Serving

  • Plate the steak and generously pour the creamy mushroom sauce over it.
  • Serve alongside roasted potatoes or a fresh green salad.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of cream or broth for best results.
