Preparation

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry on a floured surface to create a larger rectangle.
  • In a bowl, mix the chopped spinach and feta cheese, seasoning with salt and pepper.
  • Spread the spinach and feta mixture evenly over the puff pastry, leaving a small border on the edges.
  • Roll the pastry tightly into a log and slice into 1-inch pinwheels.
  • Place the pinwheels on a baking sheet lined with parchment paper.
  • Brush the tops with the beaten egg.
  • Bake for 15-20 minutes, or until golden brown. Keep an eye on them to prevent over-baking.
  • Serve warm.

Notes

These pinwheels can be served warm or at room temperature. They make a great snack or starter dish. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C) for 5-10 minutes to maintain crispness.
