  • 1.5 pounds chicken breast, cut into 1-inch cubes
  • 2 cups fresh pineapple, cut into chunks
  • 1 medium red onion, cut into chunks

Marinade ingredients

  • 1/4 cup honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Don't skip this ingredient for added flavor.
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper Adjust according to your heat preference.
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

  • Wooden or metal skewers If using wooden skewers, soak in water for 30 minutes before grilling.

Preparation

  • Cut the chicken into 1-inch cubes. Chop the fresh pineapple and red onion into chunks of a similar size. Mince the garlic.
  • If using wooden skewers, soak them in cold water for 30 minutes before grilling.
  • In a large bowl, whisk together honey, sriracha, olive oil, minced garlic, smoked paprika, cayenne pepper, salt, and black pepper to make the marinade.
  • Add the chicken cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes—or up to 2 hours or overnight for an even bolder flavor.

Grilling

  • Thread the marinated chicken, pineapple, and red onion onto skewers, alternating pieces and ensuring there’s a little space between each.
  • Preheat your grill to medium-high heat (about 400°F).
  • Place the skewers on the grill and cook for 5-7 minutes per side, turning carefully with tongs. Keep an eye on the glaze to prevent burning. The chicken is done when its internal temperature reaches 165°F and the pineapple is beautifully charred.

Serving

  • Serve the skewers immediately with extra honey or hot sauce on the side for those who like a little more kick.

Notes

Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat in the oven at 350°F for 10-15 minutes to retain crispness. Consider prepping the chicken overnight to let the flavors develop.
