Speedy Smash Chicken Caesar Tacos

Ingredients
  

For the Taco Filling

  • 1 lb 500g ground chicken
  • 1 tablespoon lemon juice Freshly squeezed
  • 1 tablespoon lemon zest
  • 3 cloves garlic Crushed
  • 1 teaspoon salt
  • 2 teaspoons dried thyme
  • 1 handful chives Finely chopped plus more to serve

For the Caesar Sauce

  • 1/2 cup aioli or mayo
  • 1/4 cup grated parmesan cheese Plus extra to serve
  • 1 teaspoon fish sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white miso paste
  • Black pepper To taste

For the Salad

  • 1 head Romaine lettuce Shredded
  • 3 scallions Finely sliced
  • 1 can chickpeas 14oz/400g, drained
  • 4 slices streaky bacon
  • 12 mini tortillas

For Roasting the Chickpeas

  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 pinch salt

Instructions
 

Pre-roast the chickpeas

  • Heat your oven to 430F/220C fan and line an oven tray with baking paper. Add your drained chickpeas to the lined tray, then pour over olive oil, a pinch of salt, and smoked paprika. Mix to coat the chickpeas, then pop into the oven for 15 minutes, or until they’re golden and crispy on the outside. Remove from the oven and set aside.

Crisp the bacon

  • Add the chopped streaky bacon to a frying pan set over high heat, and cook until super crispy, about 5 minutes. Remove from the heat and set aside.

Mix the Caesar sauce

  • In a small bowl, add aioli, grated parmesan, fish sauce, Dijon mustard, white miso paste, and black pepper to taste. Mix well to combine into a cohesive sauce.

Toss the salad

  • In a mixing bowl, add shredded Romaine, half the crispy chickpeas, crispy bacon, sliced scallions, and half of the Caesar dressing. Toss gently to combine.

Season the chicken

  • In a mixing bowl, add ground chicken, lemon zest, lemon juice, crushed garlic, salt, dried thyme, and chives. Combine well.

Spread and smash the chicken

  • Spread a heaped spoonful of the chicken mix onto each mini tortilla, spreading it into a thin, even layer.

Cook the tacos

  • Set a large frying pan or skillet over high heat and add a drizzle of olive oil. Place a topped tortilla, chicken side down, into the pan. Press firmly into the pan. Cook for 4 minutes, then flip and cook for another minute on the other side.

Build, dress, and serve

  • Spread a little of the reserved Caesar sauce on top of each taco. Top with the salad, extra grated parmesan, chives, crispy chickpeas, and an additional dollop of Caesar sauce. Enjoy while hot.

Notes

For best results, store components separately. Reheat chicken quickly to regain crispness before serving. This meal is all about sharing and enjoying with loved ones.
