For the Casserole

  • 4 cups roasted sweet potatoes, mashed Use pre-made mashed sweet potatoes for a quicker option.
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1 cup raisins Can be substituted with dried cranberries or omitted.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows

For the Topping

  • 1 cup chopped pecans Can be substituted with walnuts or almonds.
  • 1/4 cup flour Use gluten-free flour for a gluten-free option.
  • 4 tablespoons vegan butter or coconut oil Vegan butter can be replaced with any plant-based spread.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mix until well combined.
  • Pour the mixture into a greased baking dish, spreading it evenly.
  • In a separate bowl, combine chopped pecans, flour, and vegan butter until crumbly and sprinkle over the sweet potato mixture.
  • Top the dish with mini marshmallows.

Baking

  • Bake for 25-30 minutes or until the top is golden brown and the marshmallows are toasted.

Notes

For best results, allow leftovers to cool completely before storing. Store in an airtight container in the fridge for 3-5 days. Reheat covered at 350°F for 15-20 minutes.
