Dry Ingredients

  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup chocolate chips Can substitute with white chocolate or butterscotch chips.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the pumpkin puree, brown sugar, granulated sugar, and softened butter until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • Gradually mix the dry ingredients into the pumpkin mixture until just combined.
  • Gently fold in the chocolate chips.
  • Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each scoop.
  • Bake for 10-12 minutes, until the edges are lightly golden and the centers look soft.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for about a week or freeze for longer storage. Reheat in the oven at 350°F for 5 minutes or use an air fryer at 300°F.
