Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature is preferred.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Sift if needed.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup chocolate chips or raisins Optional.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth, about 2-3 minutes.
  • Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  • In another bowl, mix together the all-purpose flour, baking soda, and salt until there are no lumps.
  • Gradually blend the dry mixture into the creamed mixture, stirring gently until well combined.
  • Stir in the rolled oats along with the chocolate chips or raisins, if using.
  • Drop rounded tablespoons of dough onto ungreased cookie sheets, leaving space between each cookie.

Baking

  • Bake in the preheated oven for 10-12 minutes until the cookies are golden brown.
  • Let the cookies cool on wire racks for a few minutes before serving.

Notes

Store cookies in an airtight container for up to a week in the fridge. Freeze for up to three months, and reheat in the oven or air fryer until warm.
