  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine the gluten free flour blend, baking soda, and salt. Stir them together until well mixed.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Beat in the vanilla extract and the large egg until well combined and creamy.

Combining Ingredients

  • Gradually add the dry ingredient mixture to the wet mixture. Stir until just combined.
  • Fold in the chocolate chips until evenly distributed throughout the dough.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each spoonful.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, store cookies in an airtight container. They can be frozen for up to three months and reheated in the oven or air fryer at 350°F for about 5 minutes.
