  • 4 pieces boneless, skinless chicken breasts (or thighs) Thighs provide a richer flavor.
  • 1 cup heavy cream Half and half can be used as a substitute.
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes In oil, not the dry ones.
  • 1 teaspoon garlic powder Or 2-3 fresh cloves.
  • 1 teaspoon Italian seasoning
  • ½ cup grated parmesan cheese Use real Parmesan.
  • 3 cups fresh baby spinach Or 1 cup frozen, squeezed dry.
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Cooking

  • Place the chicken in the slow cooker and sprinkle salt, pepper, garlic powder, and Italian seasoning on top.
  • Pour in the chicken broth and drizzle with olive oil. Scatter the sun-dried tomatoes over everything.
  • Add the heavy cream and parmesan cheese last, ensuring that the cheese melts into a sauce during cooking.
  • Set the slow cooker to low for 6-7 hours, or high for 3-4 hours, until the chicken is fork-tender.
  • In the last 30 minutes of cooking, add the spinach.
  • Once cooked, spoon the creamy sauce over the chicken and serve.

Notes

For thicker sauce, stir in cornstarch mixed with water at the end. Consider adding mushrooms or doubling the parmesan for extra flavor. Great with rice, pasta, or crusty bread.
