Chop the onion, carrots, celery, and garlic. These add a flavorful base to the soup while being rich in essential nutrients.
Add the lentils, diced tomatoes, vegetable broth, cumin, and turmeric to the slow cooker, along with the prepped vegetables. Stir to combine everything.
Cover the slow cooker and set it to low. Let the soup cook for about 6-8 hours, or until the lentils are tender and the flavors have melded together. If you’re in a hurry, you can cook it on high for 3-4 hours.
Once the soup is ready, give it a taste and adjust the seasoning with salt and pepper. For an extra kick, you can add a squeeze of lemon or a pinch of red pepper flakes. Ladle it into bowls and top with your favorite garnish.
