Preparation

  • In a slow cooker, combine chicken broth, lemon juice, lemon zest, minced garlic, olive oil, thyme, rosemary, salt, and pepper. Stir gently, letting those flavors mingle.
  • Add the chicken breasts to the slow cooker and coat them well in the lemon herb mixture. Feel free to rub the spices into the chicken as you do this.

Cooking

  • Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours. You’ll know it’s done when the chicken is cooked through and tender, falling apart beautifully when you touch it.
  • While the chicken is cooking, prepare the rice in a separate pot according to package instructions. Using water or chicken broth will give it extra flavor and depth.

Finishing Touches

  • Once the chicken is tender, shred it right in the slow cooker with two forks. Mix it back into those aromatic juices, ensuring each piece of chicken is well coated.
  • Serve the lemon herb chicken over fluffy rice and garnish with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat gently, adding a splash of chicken broth to keep the chicken moist. Consider variations such as using chicken thighs, adding smoked paprika, or using fresh herbs as they become available.
