Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup lime juice about 2 limes
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 jalapeño seeded and minced (optional)

Instructions
 

  • Place the chicken breasts directly into the slow cooker.
  • In a medium bowl, whisk together the chicken broth, cilantro, lime juice, olive oil, chili powder, cumin, garlic powder, onion powder, salt, pepper, and jalapeño (if using).
  • Pour the sauce over the chicken in the slow cooker.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours until the chicken is fork-tender.
  • Shred the chicken directly in the slow cooker and stir it into the sauce.

Notes

Kid-approved and easy cleanup just one pot! Make it meal prep friendly by portioning into containers with rice or tortillas. Freeze leftovers up to 3 months. Reheat in the oven or air fryer to keep things from getting soggy.
