Main Ingredients

  • 1 pound chicken thighs or breasts, optional Use any preferred protein.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 3 pieces carrots, sliced
  • 2 stalks celery, chopped
  • 1 can diced tomatoes (14 ounces)
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 1 cup frozen peas (optional) Add in the last 30 minutes.

Preparation

  • Chop the onion, garlic, carrots, and celery. If using chicken, cut it into chunks or leave it whole. This step should take about 10 minutes.

Loading the Slow Cooker

  • Add your ingredients to the slow cooker. Start with the chicken, then add the onions and garlic, followed by the carrots and celery.
  • Pour in the can of diced tomatoes and the broth. Sprinkle thyme, basil, salt, and pepper on top, then mix everything well.

Cooking

  • Set your slow cooker to low heat for 6-8 hours or high heat for 3-4 hours.
  • If adding frozen peas, include them during the last 30 minutes of cooking. Taste and adjust the seasoning as needed before serving.

Notes

For quick sides, consider serving with crusty bread, rice, or a mixed greens salad. Store leftovers in airtight containers and reheat as needed. If the dish seems dry upon reheating, add a splash of broth or water.
