  • 1 pound boneless, skinless chicken breasts
  • 2 cups penne pasta Substitutable with rotini or ziti
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese Use freshly shredded if possible
  • 1 cup shredded mozzarella cheese Use freshly shredded if possible
  • 1 cup diced tomatoes Canned or fresh

Seasoning

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

Garnish

  • 1 tablespoon fresh parsley, chopped For garnish

Instructions
 

Preparation

  • Place the chicken breasts in the slow cooker, laying them flat.
  • Add the penne pasta, cream of chicken soup, chicken broth, diced tomatoes, Italian seasoning, garlic powder, salt, and pepper.
  • Stir well to combine all ingredients.

Cooking

  • Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is cooked through.
  • About 15 minutes before serving, stir in the cheddar and mozzarella cheese until melted.
  • Garnish with fresh parsley before serving.

Notes

For a twist, consider adding bell peppers or mushrooms. For a cozy spice, add a dash of cinnamon or smoked paprika. Store leftovers in airtight containers; reheating may require a splash of chicken broth or milk.
