  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened At room temperature
  • 1 large egg
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the pumpkin puree, brown sugar, granulated sugar, and softened butter until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until well incorporated.
  • Fold in the chocolate chips until evenly distributed.

Baking

  • Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
  • Bake for 10-12 minutes, until the edges are golden and the centers are still soft.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Store cookies in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat at 350°F for a few minutes to restore crispness.
