For the Chicken

  • 4 pieces chicken breasts (pounded to 1/2-inch thickness) Ensures even grilling
  • 2 tbsp olive oil Adds richness
  • 1.5 tsp Italian seasoning Adjust to taste
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt Adjust to family preferences
  • 1/4 tsp black pepper
  • 4 slices fresh mozzarella (preferably BelGioioso) For topping
  • 4 slices tomato (cut into 1/4-inch thick rounds) Use fresh, ripe tomatoes
  • 3 tbsp fresh basil (thinly sliced into ribbons) For garnish
  • 1/2 cup balsamic vinegar (preferably Pompeian) For glaze
  • 1.5 tbsp brown sugar For sweetness in glaze

Instructions
 

Preparation

  • Heat your grill to medium-high for even cooking.
  • In a mixing bowl, combine olive oil, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
  • Coat each chicken breast with the seasoning mixture and let marinate for at least 15 minutes.

Grilling

  • Place the chicken on the preheated grill and cook undisturbed for about 6-7 minutes.
  • Flip the chicken, place a slice of mozzarella on each piece, and grill for an additional 6-7 minutes until cooked through.

Glaze

  • In a saucepan, combine balsamic vinegar and brown sugar over medium heat, simmer until slightly thickened.

Serving

  • Once chicken is ready, remove from grill and let rest for a few minutes.
  • Serve chicken on a plate topped with tomato slices and fresh basil, drizzled with the balsamic glaze.

Notes

For variations, consider adding avocado or red pepper flakes for some spice. Serve with grilled vegetables or a salad for a complete meal.
