Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the large potatoes directly on the oven rack and bake for 45-60 minutes until tender.

Filling Preparation

  • In a skillet, heat olive oil over medium heat.
  • Add the chopped onion and minced garlic; sauté until translucent and fragrant.
  • Add the ground beef or lamb to the skillet and cook until browned.
  • Stir in the mixed vegetables and beef broth, then let simmer for about 10 minutes.

Assembly

  • Once the potatoes are soft, remove from the oven and let cool slightly.
  • Slice each baked potato in half and scoop out some insides to create space for filling.
  • Fill each potato half with the meat and vegetable mixture generously.
  • Top each with creamy mashed potatoes and spread evenly.
  • Return the stuffed potatoes to the oven and bake for 15-20 minutes until golden.

Serving

  • Remove from the oven and serve hot.
